So easy, and so SO GOOD! This recipe is a family favorite! We make it every Thanksgiving and Christmas to snack on before the main meal.  It’s also a quick recipe I can whip up whenever unexpected company stops by, since it’s made with ingredients I almost always have on hand. Give it a try at your next get together, and you’ll be looking for excuses to make it again and again!

Cook time: 15 Min
Total Time: 20 Min


1 8oz. Package Cream cheese, softened
1 Cup Shredded cheddar cheese
1/4 Cup cubed ham, or crumbled bacon


Preheat oven to 350°. Combine all ingredients in an oven-safe bowl. Cook for 15-20 minutes until the cheese in melted all the way through. Serve with Ritz or Wheat Thin crackers and try not to eat the whole bowl yourself. ;D

2 Tsp. Chili powder
1 1/2 Tsp. Paprika
1 Tsp. Onion powder
1/2 Tsp. Salt
1/2 Tsp. Garlic Powder
1 Tsp. Oregano
1/4 Tsp. Ground black pepper
1/2 Tsp. Red pepper flakes

Mix all ingredients together in a small bowl. This recipe makes enough to season about one pound of meat. I usually make a lot at one time and store it in a mason jar to use for seasoning chili, tacos, etc.

For tacos:

Brown one pound of ground beef in a skillet. Add seasoning and 1/2 cup of water. Cook down over medium heat, stirring occasionally until most of the liquid has evaporated. Serve in taco shells with all the fixin’s and enjoy!

One of my favorite things to cook (and to eat!) are soups, that’s just one of the many reasons I love fall and all that comes along with it! One I’ve been preparing a lot on these crisp fall nights has been this delicious recipe for creamy potato soup! It’s soo easy to make, and can all be cooked in one pot making cleanup a breeze! Enjoy!

Prep time: 15 min.
Total time: 35-40 min.
Serves: 4-6

Here’s what you’ll need for the soup:

5 medium potatoes peeled & cut into 1-1 1/2 inch cubes
1/2 onion finely chopped
1 8oz. package of cream cheese
1 32oz. carton of chicken broth
1 Tbs. Butter or oil
Salt & pepper to taste

& for the toppings:

Shredded cheese
Crushed red peppers
Saltine crackers
Bacon bits
Green onion
Corn chips

Here’s how to make it!

First, melt the butter over medium heat in a large stock pot, then add the onions and sauté until they are just starting to brown. Then add the chicken broth & bring to a boil. Boil the potatoes uncovered in the chicken broth for 20-25 minutes until they are tender and you can easily mash one with a fork. Turn off the stove, and add your cream cheese. Using an immersion blender or hand mixer, blend the cream cheese and potatoes into the broth until the soup reaches the desired consistency. We like to leave a few lumps in ours! Add salt and pepper to taste, then serve with your choice of toppings and enjoy!
